From the moment you arrive, it’s clear this isn’t just any boutique hotel—it’s a retreat. And staying here has a way of inspiring and rejuvenating. A visit here is also the perfect escape from New York City, located just two hours away. Whether you’re looking to curl up by a crackling fire, explore nearby hiking trails, enjoy the small nearby town of Jeffersonville, or just have a laid-back weekend trip, Rest Co. promises an unforgettable getaway.
I had the pleasure of staying at Rest Co. last winter and I’ve honestly been dreaming about returning ever since. While I’m sure it’s stunning to experience during the spring and summer, if you’re searching for a winter getaway, I promise you that Rest Co. is the perfect spot! Getting to Rest Co.
As I mentioned, this beautiful property is located in Jeffersonville, New York, a lovely older village nestled in the Western part of Sullivan County. It’s quaint, charming, and surrounded by stunning mountainous scenery. The locations of both Rest Co. and Sullivan County are very accessible and close enough to nearby cities for an easy weekend trip. Below I will share some cities within a convenient radius of Rest Co.:
NYC: 110 miles, 2.5 hr drive
Syracuse: 114 miles, 2.5 hr drive
Albany: 117 miles, 2.5 hr drive
Philadelphia: 167 miles, 3.5 hr drive
Buffalo: 270 miles, 4.5 hr drive (this one may not seem like a close radius, but this is where I traveled from and it was totally worth the road trip!)
The Property
I can clearly remember the moment we pulled up to Rest Co. and I laid my eyes on it for the first time. I could immediately tell it was going to be an amazing stay! The property, which spans acres of stunning landscape, offers a harmonious blend of modern elegance and natural serenity. The main building, where guests are directed to go for check-in, has the most striking architectural design- a nice mix of contemporary with rustic charm. You’ll notice the warm wood tones, sleek glass panels, and stone accents, which perfectly complement the surrounding environment.
Rest Co. has a fantastic outdoor space, complete with cozy fire pits and complimentary smores kits, an incredible deck perfect for reading, and not to mention the pool! The pool at Rest Co. is definitely one of its most exceptional features. It’s heated year-round so guests can enjoy it no matter what time of year they visit. Surrounded by lush meadows and overlooking a serene pond, the pool area features shaded lounge chairs and a poolside bar serving refreshing drinks. It’s open daily from 7 am to 11 pm, so guests can even enjoy a night swim.
The Rooms at Rest Co.
Fun fact: Rest Co. used to actually be a chicken coop before it became the boutique hotel that we see today! There are five uniquely designed suites- some of which are named Coop 002, Coop 003, etc. for their chicken coop reference. Each of these spacious rooms are equipped with queen beds, oversized rain showers, and dedicated seating areas, ensuring a comfortable stay. We stayed in one of the larger rooms, named Suite 005, which featured a separate entrance and a soaking tub. I personally loved the cozy bathrobes that were also provided, making our stay even more rejuvenating.
Another very unique feature of Rest Co., which I’ve yet to experience at another boutique hotel is their massage offerings. You can book a massage through the reception area and their incredible masseuse comes right to your room, sets up her table, and gives you an incredible massage right in the comfort of your suite. It was such a fantastic experience, which made my stay even more memorable.
Just to note, all accommodations at Rest Co. are designed for two-person occupancy and welcome guests over 14 years old. Dogs are also welcome, with a $50 fee per dog and a limit of two dogs per room.
Exceptional Dining at Rest Co.
The on-site restaurant at Rest Co. offers an incredible dining experience in a very cozy, intimate setting. The diverse menu caters to various palates, with half of the offerings dedicated to inventive vegan dishes. Guests can enjoy breakfast and dinner options crafted from locally sourced ingredients, including fresh vegetables and plant-based meats, which showcases the culinary team’s commitment to delivering a little something for everyone.
There is a thoughtfully curated selection of drinks to complement the lovely dining experience at Rest Co. The bar serves amazing cocktails and mocktails featuring fresh ingredients. And an on-site sommelier is there to assist guests in wine pairing.
They do change up their menu regularly, depending on what’s in season, but I can say that everything we ordered was sensational, and it’s a meal I still often think about!
Beyond the Property: Explore the Charm of Jeffersonville
While Rest Co. is a destination in itself, its location offers easy access to the stunning surrounding areas of the Catskills. The charming village of Jeffersonville is located just minutes away from Rest Co. and boasts boutique shops, cute cafes, and great restaurants, which perfectly capture the spirit of small-town New York. Here are a few fun things I would recommend doing in the area:
- Have dinner at The Cabin– a super cozy log cabin restaurant serving up delicious comfort food and fantastic local beers
- Walk down Main Street in Jeffersonville and check out some of the cute shops. There are amazing treasures to be found at The Vintage House
- Grab some delicious pastries at Jeffersonville Bake Shop. This was one of our favorite places in town! Everything was so fresh and delicious
